One of the youngst distilleries in Scotland, Daftmill have only recently started releasing their first drams. The Daftmill 2006 Sumer Release, distilled in 2006, is a brilliant addition to their range.

Daftmill was founded by brothers Francis and Ian Cuthbert in 2005. They set it up in a mill on their family farm. They are a unique distillery and one of the smallest in Scotland. They also operate a “single estate” production process, meaning they grow the barley used in production on site.

Despite the fact they were set up and working over a decade ago, the distillery did not release any bottlings until earlier this year, having signed a global distribution agreement with Berry Bros & Rudd in 2017. Their released a 2005 expression, with only 250 available. Those looking to own a bottle had to show interest by signing up on the Berry Bros & Rudd website.

Perhaps the most intriguing thing about Daftmill is that they practice a seasonal distilling method, which was typical in Scotland in the 1800s. This means that distillation only takes place in the agricultural off-season, or two months in the summer, and two months in the winter.

This is a traditional process that is not seen anymore, and is probably the reason why Daftmill’s drams are so in demand.

Tasting notes for the Daftmill 2006 Summer Release

Bottle cost: £128

One such in demand malt is their 2006 Summer Batch release. This dram was distilled in 2006 and has been maturing for 12 years in ex-bourbon casks from Heaven Hill distillery in America.

The nose opens with marzipan and pastry, and a lovely apple note. It is refreshing and sweet. Sweet nuts really come through, with almonds, pecans and hazelnuts.

The palate is rich and dense with flavour. More sweet nuts, with some oak wood, vanilla and white chocolate come through. Citrus fruits abound and add a lovely zest. They really help to bring the dram to life.

Fresh fruits such as apples, pear, apricots and white grapes add a lovely bite to the over all flavour.
